Assistant General Manager | Italian High Volume Opening | NYC
An upscale, Italian-driven, high-volume concept in a historic Midtown location is seeking an Assistant General Manager to join the opening leadership team. This is a rare opportunity to help launch a dynamic, multi-revenue stream operation centered around a vibrant 300-seat dining room and a high-energy, 50-seat circular bar.
This concept blends classic Italian hospitality with the energy of a modern all-day destination, seamlessly integrating dine-in, bar, and grab-and-go experiences. This role is ideal for a polished, floor-driven operator who thrives in fast-paced environments, understands bar-centric service, and is excited to help build a flagship concept from the ground up.
Key Responsibilities:
• Partner with the General Manager to execute all aspects of pre-opening and launch
• Help build, hire, train, and develop a high-performing FOH team from the ground up
• Act as a highly visible floor leader—owning service flow, energy, and guest experience across a large-format space
• Support opening systems, SOP development, and operational infrastructure
• Partner closely with the Beverage Director to execute a high-volume, bar-driven program (wine, cocktails, aperitivo-style service)
• Assist in managing bar operations including service standards, staff education, inventory flow, and cost controls
• Drive performance across dining room, bar, and grab-and-go revenue streams
• Support P&L management including labor, COGS, and operational efficiencies
• Maintain strong operational discipline across inventory, cleanliness, and food safety standards
• Handle guest relations with polish and professionalism, setting the tone for service culture from day one
• Analyze performance and continuously refine operations in a high-volume environment
Qualifications:
• 3–6+ years of management experience in upscale casual or high-volume, bar-driven restaurants
• Opening experience strongly preferred
• Experience managing large-format dining rooms and high-energy bar environments
• Confident, floor-driven leader with strong presence and communication skills
• Exposure to beverage programs; wine knowledge and Italian bar culture a strong plus
• Proven ability to build and lead teams in fast-paced environments
• Strong understanding of labor management, cost controls, and operational systems
• Experience with POS, scheduling, and reporting tools
• Flexible schedule; comfortable with nights, weekends, and high-volume service demands
Compensation & Benefits:
• $100,000–$120,000 base (DOE)
